2 lbs. ground beef
1/2 to 1 small onion, chopped
1/2 lb. small curd cottage cheese
12 oz. can V-8 juice
1/2 to 1 lb. mozzarella cheese (I use 1 lb.)
1 package spaghetti sauce mix
1 can sliced mushrooms, drained
1 tsp. salt
1/4 tsp. pepper
8 oz. tomato sauce
1/2 lb. lasagna noodles (12-13 noodles for 9 x 13)
1/2 cup Parmesan cheese

Directions:

Brown meat, drain. Add salt, pepper, and onion. Simmer 10 minutes. Add tomato sauce, mushrooms, V-8 juice, and spaghetti sauce mix. Stir, then simmer for 10 minutes. Boil noodles according to package directions. Drain and rinse. Soak in ice water for 5-10 minutes.

Layer noodles lengthwise, 1/3 of sauce, 1/2 of cottage cheese, and 1/2 of mozzarella cheese; repeat same for next layer, but turn your noodles crosswise; last layer put your noodles lengthwise again, sauce, and top with the Parmesan cheese. Bake in preheated 350 oven for 20-30 minutes. Let this stand for a few minutes before cutting.
