6 green zucchini, shredded in cuisinart and drained
2 eggs, beaten
3 tbsp grated onion
1 tsp salt
1/4 tsp pepper
1/2 c grated cheese (mixed)
1 1/2 c crushed saltines
1/2 c butter, melted

Directions:
Directions:
Mix saltines and melted butter; save 1/3 cup and set aside. Add zucchini to egg. Add onion, saltines, salt and pepper. Place mixture in greased casserole dish. Top with cheese. Then top with the cracker crumbs that were set aside. Sprinkle with paprika. Bake at 325F for 60 minutes
