1 cup chopped plum tomatoes
1 cup chopped green bell pepper
1 cup chopped onion
1 tsp dried thyme
1 tbsp chopped parsley
4 cloves garlic, minced
1/2 cup white wine
1/4 tsp salt
1/8 tsp pepper
4 fillets orange roughy or other white fish fillet

Directions:

Saute pepper, onion and garlic in olive oil for 5 minutes. Add tomatoes and cook for 2 minutes more. Add white wine, salt and pepper and cook another minute. Place fish on the sauce and steam, covered until the fish flakes ( the thickness of the fish determines the time.)
