1. 2 1/2-3lb chicken, cut into pieces
flour
salt & pepper
1/4 tsp dried thyme
1/3 cup butter
1/4 cup shallots or onions, chopped
1/4 lb mushrooms, chopped
1/2 cup white wine
3/4 cup canned tomatoes, chopped
2 tbsp parsley, chopped
1/4 tsp tarragon, dried
1 package frozen artichokes, defrosted

Directions:
Directions:
Dredge the chicken in a mixture of the flour, salt, pepper and thyme. In a large skillet melt the butter, add the chicken pieces and brown on all sides. Add remaining ingredients, cover and cook slowly until the chicken is tender, 30-45 minutes.
