2 lbs. lean ground beef
2 eggs
1 tsp salt
1 tsp pepper
flour
olive oil
1 medium onion, sliced into strips
1 green bell pepper, sliced into strips
1 Tbs chopped garlic
1/2 cup ketchup
1/4 cup yellow mustard
1/4 cup barbecue sauce
2 Tbs steak sauce

Directions:

In a mixing bowl combine beef, eggs, salt and pepper. Divide beef into 8 portions and roll into balls. Partially flatten to hamburgers as they will draw up during cooking. Flour the hamburgers.

In a mixing bowl add the ketchup, mustard, bbq sauce and steak sauce. Stir until blended.

Heat an electric skillet or pan to medium high about 375. Add enough olive oil to coat the bottom. Brown the hamburgers on each side for about 2 minutes in 2 batches. Remove the meatballs to a plate. Add olive oil to the pan to coat. Fry the onion, bell pepper and garlic until soft.

Reduce heat to low (simmer) or about 275. Spread the onion/pepper mixture evenly over the pan. Lay the hamburgers on top of the onion/pepper mixture in the pan. Pour any meat juices into the sauce mixture and stir. Pour the sauce mixture over the hamburgers covering each one.

Cover the pan and allow to cook for 10 minutes on a low simmer. Turn over the hamburgers and allow to cook another 10 minutes.

You may add 1/2 cup of instant rice with 1/2 cup water to the meat if you like.

Serve with mashed potatoes.
