2 med. eggplant, Italian bread crumbs, 2 eggs, vegatable oil, spaghetti sauce, 2 c. mozzarella cheese

Directions:
Directions:
Cut eggplant into 1/4 in. round slices, place on a paper towel to drain. Beat eggs, dip eggplant in egg then coat with bread crumbs. Brown eggplant in skillet with veg. oil and set aside. In square casserole dish layer eggplant, spaghetti sauce, and cheese. Bake at 350 for 35 min. or until bubbly. Serve with angel hair pasta.
