1 1/2 pounds yellow squash
olive oil
stoneground yellow cornmeal
salt
pepper

Directions:
Directions:
Slice squash thinly and place in a cast-ion skillet. Sprinkle with 2/3 c. cornmeal, salt and pepper. Pour about 1/3 c. olive oil over the top. Place in a 350 over. Stir occasionally and bake until brown and crisp. About 2 hours.

I sometimes precook squash in the microwave so it will not take as long. Still takes about 1 hour.
