1 c. unbleached all-purpose flour
1 large egg
1 T. olive oil (do not substitute)
1/2 t. salt
1/2 t. warm water

Directions:
Directions:
Combine all the ingredients in a mixing bowl and work with your fingers until the dough will hold together and can be shaped into a ball. Add a few more drops of water, if necessary, but do not let the dough become sticky. Knead for 10 minutes. The dough should be very smooth and shiny. Cover and let rest 10 minutes

Divide into 4 parts and roll to about 1/16" thick. (Easier with a pasta machine) Cut into desired widths. To make lasagna noodles, roll the thin dough up like a jelly roll and cut by hand into 2" strips. Unroll immediately. The noodles may be left to dry or you may cook them immediately in boiling, lightly salted water. Fresh noodles cook faster than dried ones so check the noodles by tasting them after 2 minutes to see if they a done.
