6 large potatoes, boiled and grated
1/2 stick butter
2 c. grated sharp cheddar cheese
3 T. chopped green onion
1 (8 oz) carton sour cream
1 t. salt
white pepper to taste

Directions:
Directions:
Boil, peel and grate potatoes. Melt butter, 2 c. cheese, Add onion. Remove from heat and add sour cream, salt and pepper. Pour over grated potatoes and mix with spoon. Put into a greased casserole, dot with butter and bake at 325 for 30 minutes.

You may make ahead and freeze. (I use more chopped green onion. I usually boil the potatoes one day, put in refrigerator, then grate the next day)
