1 qt. vanilla ice cream (allow to get soupy before adding mix)
1 c. canned pumpkin
1/4 c. sugar
1/4 tsp. cinnamon
1/4 tsp. ginger
1 large or 8 small pie crusts (shortbread or graham cracker)

Throw everything in a large bowl and stir. Pour into crust and set at level place in freezer to harden overnight.
