1 qt. milk
1/4 c. butter
1 c. quick (not instant) grits
1 t. salt
1/8 t. pepper
1/3 c. butter, melted
1 c. Swiss cheese, grated
1/3 c. Parmesan cheese, grated

Directions:
Directions:
1. Bring milk to a boil. Add 1/4 c. butter, cut into pieces. Gradually add in grits. Resume boiling and continue to cook and stir about 5 minutes. Remove from heat and add salt and pepper.
2. Beat with electric mixer for 5 minutes. Pour into 9x12 greased casserole. Let set in refrigerator. Cut into rectangles and place like fallen dominoes in a buttered shallow casserole. Pour 1/3 c. melted butter over top. Sprinkle with Swiss cheese and Parmesan. (Refrigerate or freeze if desired, at this point. To serve, bring to room temperature. Bake at 400 for 30 to 35 minutes.
