1 1/4 cup uncooked orzo pasta
3 cups chopped grilled chicken breast strips
1 1/2 cups trimmed arugula
1 cup grape tomatoes, halved
1/2 cup chopped red bell pepper
1/4 cup chopped onion
2 tbsp chopped fresh basil
1 tsp chopped fresh oregano
1 tsp red wine vinegar
1 tbsp extra virgin olive oil
salt and pepper to taste
6 tbsp crumbled goat cheese

Directions:
Directions:
Cook pasta. Drain. Cool. Combine pasta, chicken and next 6 ingredients through oregano in a large bowl and toss. Combine vinegar, oil, salt and pepper in a small bowl; stir with a whisk. Drizzle vinegar mixture over pasta. Toss well to coat. Sprinkle with cheese.
