1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/4 butter, melted

3 (8 oz) packages of cream cheese, softened
1 (14 oz) can sweetened condensed milk
3 eggs
2 tsp vanilla extract
1 can pie filling of your choice (cherry or blueberry are my favorites)

Preheat oven to 300. Combine crumbs, sugar and butter. Press equal portions into bottoms of 24 lightly greased muffin cups (or just place a vanilla wafer in the bottom of each).

In a large mixer bowl beat the cream cheese until fluffy. Gradually beat in the sweetened condensed milk until smooth. Add eggs and vanilla. Mix well. Spoon equal amounts into prepared cups. Bake 20 minutes or until set. Cool. Chill. Before serving place 1 tbsp filling on top of each cheesecake. Refrigerate leftovers.

To make chocolate cheesecakes melt 1 cup of semi-sweet chocolate chips and add to batter.

You may want to use cupcake liners to make removal of cheesecakes easier - or after cooling, freeze for 15 minutes and then remove cheesecakes with a narrow spatula. Place on a platter.
