1tsp grated lemon rind
1tbsp lemon juice
1lb tart apples, thinly sliced 2 or 3
1/2c. sugar
1tbsp flour
1tsp cinnamon
1 refrigerated pie crust, or make your own
1tbsp sweet butter, cut into 6 pieces

Preheat oven to 450. Toss the apples with the combined sugar, flour, cinnamon and lemon rind. Sprinkle with lemon juice. Place the pie crust on a rimless cookie sheet lightly dusted with flour. With a floured rollingpin, roll the crust to approximately 13 inches. Heap the apples in the center of the crust leaving about a 2 inch border all around. Dot the apples with the butter. Fold the pastry border back over the apples leaving the slices in the center exposed. Brush the border lightly with a little water or mild and sprinkle with the reserved sugar. Bake for 12 minutes, then reduce the temperature to 425 and bake until the pastry is a golden brown and the apples are soft and bubbly, about 15 minutes longer.
