2 lbs. lean ground beef
2 eggs, beaten
3/4 c. bread crumbs
1/2 c. tomato juice
1 T. parsley
1/2 tsp. oregano
1/2 tsp. garlic powder
8 slices boiled ham
1 1/2 c. shredded mozzarella cheese
(Additional slices of cheese for final minutes of baking)

Using your hands, mix ground beef, eggs, bread crumbs, tomato juice, parsley, oregano and garlic powder together. Spread this mixture on a piece of foil to form a 12" by 10" rectangle. Layer 8 slices of boiled ham on top of meat mixture. Sprinkle shredded mozzarella cheese on top of ham slices. Starting at 10" edge, roll the mixture to form a loaf, lifting off the foil as you go. Seal the seam and ends of the loaf to contain the ham and cheese. Place in a baking dish and bake at 350 for 1 1/4 hour. Top with a few slices of mozzarella cheese during the last 15 minutes of baking time.
Serve with your favorite pasta and spaghetti sauce.
