1 c. - Uncle Ben's Long Grain Rice(uncooked)
2 c. - Water
3 - Eggs
1/8 c. - Sugar
Dash - Salt
1 tsp. - Vanilla
2 c. - Milk
1/2 c. - Raisens
Cinnamon
Nutmeg

Directions:
Directions:
Preheat Oven to 350 degrees.
Prepare and cook rice using the 2 c. water and cool well.
Lightly Grease a 9"x13" glass dish or lg. casserole(you'll be putting the pudding in this dish).
Have another larger pan ready by adding 1" of water to it and set it aside.
Mix the cooled rice and other ingredients together.
Pour into the greased dish.Sprinkle the top lightly with nutmeg & cinnamon(using 2x as much cinnamon as nutmeg). Place pan with water in preheated oven and then carefully place the dish with the pudding into the pan. Bake 'til "set" and knife inserted into center of pudding comes out clean. Carefully remove the dish with the pudding, from pan with water, onto a wire rack with a towel underneath to catch any water droplets. Cool and refrigerate before serving.

This is Aunt Ann Minnegan's recipe. She shared several dessert recipes that Dad liked with Mom, but this one was Dad's favorite! Mom made it often for our family and now I make it for Dad for special occasions, as I know it's a gift he'll always enjoy)!
