3 pounds red potatoes peeled and quartered
10 garlic cloves
2 tablespoons margarine
1 cup skim milk
1/3 cup plain nonfat yogurt
1/2 cu0p chopped green onions (scallions)
Salt and pepper to taste

Directions:
Directions:
Preheat oven to 350 F.
On a non-stick baking sheet coated with non-stick cooking spray, spread the potatoes and garlic. Bake for 45 minutes, or until the potatoes are tender.

Mash potatoes in a large mixing bowl, then mix in the margarine, milk, and yogurt until creamy. Fold in the green onion and add salt and pepper to taste.
