1 (26 oz) jar spaghetti sauce
2 (9 oz) packages of any flavored tortellini (fresh or frozen and thawed)
1 1/2 cups water
1 large green bell pepper, chopped
1 medium red onion, chopped
1 (4 oz) can mushrooms, drained
2 cups reduced-fat shredded mozzarella cheese

Directions:

Preheat oven to 350F. In a 9"x13" baking pan, combine all the ingredients except the cheese and mix well. Cover tightly with aluminum foil and bake for 25 minutes. Remove from the oven, stir, cover, and bake for 20 more minutes. Remove the foil, sprinkle with the cheese, and bake, uncovered, for 5 more minutes or until the cheese is melted. Serve immediately.
