1 medium eggplant
1/2 cup dry bread crumbs
1/4 cup grated parmesan cheese
1 bottle fat free italian dressing

Directions:
Directions:
Slice eggplant into 1/2" slices. Combine cheese and breadcrumbs. Dip slices in salad dressing. Coat with crumbs. Bake 450 for 12-15 minutes.

May serve with marinara sauce.
