Mexican Potato Soup Recipe

3 strips bacon
3 large potatoes, cubed
5 c. water
1 (8 oz) can tomato sauce
1/4 c. chopped onion
1 1/2 t. salt
1 can chopped Rotel
1/2 pound grated sharp cheddar cheese

Directions:
Directions:
Using a large kettle, brown bacon. Remove the bacon, drain and crumble. Set aside.
Add potato cubes to bacon drippings and stir until coated. Add water, tomato sauce, Rotel. Simmer for 1 hour or more.
TO SERVE: Place grated cheese in the bottom of a soup bowl. Top with soup and then garnish with bacon.
