1-3 pieces of left over chilled chicken (no BBQ sauce on them)
1/4-1/2c fine chopped celery
1/2c chopped walnuts
1c green or red seedless grapes
Italian Dressing to taste
salt and pepper to taste

Directions:
Directions:
Cube chilled chicken. Cut in half or leave whole the grapes. Mix chicken, grapes, celery, and walnuts toether. Add dressing, salt and pepper to taste. Serve immediately or chill until ready to serve.

Boneless skinless chicken breast work best...if grilling, just for this recipe 5 minutes on the grill leaves a nice juicy, tender, moist piece of meat.(internal temp 130 degrees) Green grapes look nice, red gives the salad some POP. I've often thought about adding 1pkg of crushed uncooked ramen noddles for extra crunch....
