3 cups chopped apples (peeled)
2 cups sugar
2 sticks butter
3 eggs
3 cups sifted flour
2 cups chopped pecans
1 1/2 tsp soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
2 tsp vanilla

Directions:
Directions:
Leave butter out to soften; cream butter and sugar until well blended. Add the eggs one at a time, beating after each one. Mix the dry ingredients and add to egg/butter mixture. Add apples, nuts and vanilla.
Pour into a greased and floured tube pan (or bundt). Bake 325 for 1 1/2 hours or until straw inserted into center of cake comes out clean. Let stand 15 minutes before turning out.
Use a big spoon instead of electric mixer to mix.
