4 Egg Whites
2 c. Sugar
1 1/3 c. Matzo Meal
1 1/2 tsp. Cinnamon
Rind of 1/2 Orange
Rind of 1/2 Lemon
2 c. Ground Pecans

Beat whites stiff, add sugar gradually
Fold in flavoring by hand (Cinnamon and peel)
Add Nuts, and Matzo Meal
After batter is made up, put in refrigerator overnight or for several hours
Light oven at 300
Grease sheet well
Make small balls
Put a piece of pecan in center and bake at 325 for about 20 minutes
Let cool very little
Remove from sheet so they don't stick to pan
Put in cookie jar, cover tightly so they don't dry out
