1 tbsp. margarine
4 boneless, skinless chicken breasts
3 garlic cloves, minced
2 c. water
3/4 c. uncooked rice
2 chicken bouillon cubes
1 lemon, halved
1 1/2 c. frozen broccoli, carrots, and cauliflower

Directions:
Directions:
Melt margarine in a large nonstick skillet. Add chicken; cook over medium high heat for 5 to 7 minutes or until lightly browned. Add the garlic and cook briefly. Add the water, rice, bouillon cubes and juice from one lemon half. Bring to a boil. Cover and reduce the heat and simmer for 20 minutes. Add the broccoli, carrots and cauliflower; continue cooking for 5 minutes or until the juices run clear. Cut the remaining lemon half into slices and use for garnish
