8 oz. Penne Pasta
3 carrots, peeled & sliced in small coin size
2 c. broccoli flowerets
1 medium zucchini, sliced
1 c. frozen peas
1 lb. boneless, skinless chicken breasts, cut into 1-inch pieces
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. hot pepper flakes
1 tbl. olive oil
3/4 c. heavy cream
1 c. shredded locatelli cheese

Cook pasta in boiling salted water for 12 minutes. Add carrots, broccoli and zucchini for the last 4 minutes of cooking time. Add peas during the last minute. Drain, transfer to a large serving bowl.
Sprinkle chicken with 1/4 tsp. of salt and 1/8 tsp. of pepper. Heat oil in large nonstick skillet over medium-high heat. Cook for 8 minutes or until completely cooked. Add cream, cheese and the balance of the salt and pepper. Boil for 2 minutes until thick. Toss with the pasta and vegetables. Serve immediately. Make sure all is very hot.
Sprinkle with additional cheese if desired.

Serves 4.

A quick and easy dish to make. If you do not have penne pasta, any short pasta will work just as well.
