6 large eggs
cup frozen corn kernels, thawed
1 (4 oz) can chopped green chilies
cup fat-free milk
1 tbsp. chopped fresh parsley
2 tsp. chopped fresh thyme
tsp. freshly ground pepper
3 dashes hot pepper sauce, or to taste
8 cherry tomatoes, halved
1 scallion, cut into 1-inch pieces

1.) Whisk together the eggs, corn, chilies, milk, parsley, thyme, ground pepper, and pepper sauce in a large bowl.

2.) Spray a medium nonstick skillet with canola nonstick spray and set over medium heat. Add the egg mixture; top with the tomatoes, cut-side up, and the scallion. Cook, covered, until the eggs are set, about 15 minutes. Cut into 4 wedges.
