Mexican Dinner Recipe

Crazy Crust:

1/2 c. flour
1/4 c. solid shortening
1/2 t. salt
1/2 c. sour cream
1/2 t. baking powder
1 egg


1 lb. ground beef
1/4 t. hot pepper sauce
1/2 c. chopped onion
1 can kidney beans, drained
1 t. salt
1 (6 oz.) can tomato paste


1/2 c. shredded lettuce
1/2 c. shredded Monterey Jack
1/2 c. finely chopped tomato

Taco sauce, if desired

Preheat oven to 425. Grease and flour bottom and sides of 9 in. pie pan. In medium bowl combine crust ingredients. Stir with fork until blended but still lumpy. Spread thinly on bottom and thickly up sides of prepared pan to within 1/4 in. of rim.
Filling: Brown beef. Add onion and cook until tender. Drain off excess fat. Stir in salt, hot pepper sauce, beans, and tomato paste. Spoon into crust. Bake 20 to 30 min. until crust is deep golden brown.
Remove from oven and sprinkle with lettuce, tomato and cheese. Serve with taco sauce, if desired.

I double this. I also add salt and pepper and layer in real parmesan cheese. Original recipe contains 2 t. chili powder.
