2 T. fresh lemon juice
2 T. olive oil
1/2 t. homey
salt and pepper
2 c. romaine, cut into ribbons
1 c. cucumber, halved lengthwise, seeded and sliced
1 c. cherry tomatoes, halved
1/3 cup kalamata olives, halved
1/4 c. scallions, sliced
1/4 c. fresh parsley leaves
2 T. chopped fresh mint
1/3 c. feta cheese, crumbled

Directions:
Directions:
WHISK lemon juice, oil, honey, salt, and pepper together for the dressing.
COMBINE remaining ingredients in a bowl (except feta). Toss with dressing and garnish with feta.
