Rhubard Meringue Pie Recipe

3 cups raw rhubard
2 egg yolks
1 cup sugar
3 T water
2 T (rounding) flour
2 egg whites
few grains of salt
1/2 cup sugar
1/2 tsp vanilla
1 pie crust

Directions:
Directions:
Pour boiling water over the rhubard and let it stand a little while. Then drain. Add egg yolks, sugar, water, & flour. Place in a pie crust & bake until set. For the meringue beat egg whites with salt until frothy. Add sugar gradually, beating constantly until stiff. Spoon meringue over top of rhubard custard. Bake 350 degrees for 15-20 min.

for meringue can use 3 egg whites with 6 T sugar or 4 egg whites with 1/2 cup sugar
