Steak: filet, rib, etc (room temperature)
Fresh crushed peppercorns
Olive oil and butter
Cognac
creme or half and half

Directions:
Directions:
Crush peppercorn and coat both sides of the steak. Heat about 4 T. olive oil and 2 T. butter in a cast-iron skillet. Over high heat brown steak on both sides and cook to desired doneness. Remove from heat and keep warm.

Deglaze skillet with 1/4 to 1/2 c. of cognac. Cook down to about 1/2. Remove from heat. Add 4 T. creme, 1 T. butter and allow the thicken slightly-stirring constantly. salt to taste. Serve over steak.
