Any vegetable- asparagus, cauliflower, broccoli, eggplant, etc. broken or sliced into pieces
olive oil
kosher salt
freshly ground pepper

Directions:
Directions:
Preheat over to 425
Place vegetables on a Pam sprayed rimmed baking sheet.
Drizzle with olive oil and sprinkle with salt and pepper. Bake for 15 to 20 minutes until tender and slightly browned.
