2/3 c. extra-virgin olive oil
6 to 8 large cloves garlic, sliced
1 1/2 pounds large shrimp, peeled, deveined, and patted dry
1/3 c. dry white wine
Kosher salt and freshly ground black pepper
1/4 c. thinly sliced fresh basil
1 t. finely grated lemon zest

Position a rack in the center of the oven, and heat the oven to 425.

Put the oil and garlic in a small skillet and set over medium heat. Cook, stirring occasionally, until the garlic just begins to turn golden, 8 to 12 minutes. Strain the garlic and oil through a sieve set over a bowl; spread the garlic on a paper-towel-lined place to drain.

Put the shrimp in a baking dish about 7x9 inches. Pour the garlic oil and wine over the shrimp and season with 1 t. salt and 1/4 t. pepper.

Roast, stirring once, until the shrimp are pink and cooked throughly, 8 to 12 minutes. Sprinkle the garlic slices, basil and lemon zest over the shrimp, stir to combine and serve immediately.
