3/4 c.butter, softened
1/2 c.white sugar
1 c. packed brown sugar
2 egg whites
1 egg
1 tsp. vanilla extract
1 1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/2 tsp. salt
3 c. quick-cooking oats
1/2 c. semisweet chocolate chips
1/2 c. butterscotch or peanut butter chips

Preheat oven to 350 F. In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Add the egg whites and egg, one at a time, beating well with each addition, then stir in the vanilla.

Whisk together the flour, baking soda, cinnamon, nutmeg and salt. Gradually stir the dry ingredients into the creamed mixture. Next, stir in the quick oats, chocolate chips and either butterscotch or peanut butter chips. Drop by rounded spoonfuls onto an ungreased cookie sheet.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I've never met anyone who didn't like these cookies and they get eaten almost as fast as they get made. HINT: for more uniform cookies, I use a small ice cream scoop to put them on the cookie sheet.
