Rum Pecan Pie (Mary Dughi) Recipe

2 c. heavy cream (divided)
1/2 c. butter
2 egg yolks
2 c. powdered sugar
1/4 tsp. salt
1/3 c. dark rum
1 tsp. vanilla
1/2 tsp. lemon juice
1 envelope unflavored gelatin
1/4 c. cold water
2 c. whole pecans
10" Graham cracker crust
1/4 c. sugar
2 tsp. dark rum

Whip one cup of cream and set aside.

Combine butter, egg yolks, powdered sugar, salt, vanilla, lemon juice and 1/3 c. of rum and blend thoroughly with an electric mixer until smooth.

In cold water, soften the gelatin and then stir over low heat in a saucepan. Slowly add to the butter mixture. Fold in the pecans, Then gently fold in whipped cream. Pour into crust and chill for several hours.

Whip remaining cream until soft peaks form and add remaining sugar and rum. Cover on chilled pie and serve.
