Marinated Shrimp Salad Recipe

1 lb. shimp, peeled and cooked
1 14-oz. can hearts of palm, cut into bite size pieces
1 8-oz.can bamboo shoots, drained
1 8-oz. can quartered artichoke hearts, drained
1 8-oz. package sliced mushrooms
1 pint cherry tomatoes

1.5 C vegetable oil
1 C. white wine vinegar
1 C. chopped fresh parsley
3 garlic cloves, minced
1 tb. salt
1.5 tsp. dried thyme
1 tsp. pepper

Mix shrimp and veggies together in a large bowl. Combine the oil and other ingredients and pour over the shrimp mixture. Marinate at least 8 hours.
