3 eggs
1 cup salad oil
2 cup sugar
1 teaspoon vanilla
2 cups grated zucchini
1- 8 oz. can crushed pineapple, with juice
3 cups flour
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons soda
1 1/2 teaspoon cinnamon
3/4 teaspoon nutmeg
1/2 cup raisins
1/2 cup nuts

1. Beat eggs, oil, sugar and vanilla together until light & foamy.
2. Add dry ingredients.
3. Pour into 4 small loaf pans (3 1/2 X 7 1/2).
4. Bake 1 hour at 325.
