1 Heaping cup Onion, finely diced
1 oz Clarified butter
1 c White Wine
2 c Demi-Glace (see recipe this book)
2 tsp Dry mustard, ground, dissolved in warm water
1/2 tsp Salt, to taste
1/4 tsp Pepper, to taste
2 oz Butter cut into small pieces

1. Saute the onions in butter until they are translucent
2. Add the wine and reduce to 1 ounce
3. Add the Demi-Glace; reduce until the sauce coats the back of a spoon, and remove from heat.
4. Add the dissolved mustard; Strain the sauce. Adjust the seasoning to taste with salt and pepper.
5. Finish with butter

This sauce is usually served with grilled or roasted pork. It is especially good drizzled over sliced, roasted boneless pork loin.
