Apple Walnut Cake Recipe

4 c coarsely chopped apples 2 c sugar
2 slightly beaten eggs 1/2 c vegetable oil
2 tsp vanilla 2 c sifted flour
2 tsp baking soda 2 tsp cinnamon
1 tsp salt 1 c walnuts, chopped
Lemon Frosting
4 T butter 3 c powdered sugar
2 T lemon juice 1-2 T cold water
a few grains of salt

1. Combine apples and sugar and let stand until sugar draws out juice.
2. Combine eggs, oil and vanilla.
3. Sift together flour, baking soda, cinnamon and salt.
4.Alternately add flour mixture and apple mixture to egg mixture. Add walnuts and pour into greased
9" x 13" pan.
5. Bake at 350 for one hour. Cool on rack.
6. Combine butter, sugar, salt and lemon juice. Add water until desired consistency. Frost cake.
