1 pkg baby spinach
1/4 red onion, sliced in thin wedges
1/2 med cucumber, sliced and cut in 1/2.
11/2 c strawberries, hulled and quartered
1/4 c sliced toasted almonds

Dressing:
1 lemon
2 T white wine vinegar
1/3 c sugar
1 T oil
1 tsp poppy seeds

Directions:
Directions:
Place spinach, cucumber, onion and strawberries in salad bowl and mix together.
For dressing, use 2 T lemon juice and 1/2 tsp lemon zest or rind added to other ingredients and whipped togaeher until well mixed. Store in refrigerator and pour over salad to serve. Sprinkle nuts over top
