Ingredients:  
1 cup raisins
2/3 cup hot coffee (plus 1 Tablespoon if at high altitude)
1 cup brown sugar
2/3 cup shortening
2 eggs
1 1/2 cup flour (I use part whole wheat)
1/4 teaspoon salt
1/2 teaspoon baking powder (slightly less at high altitude)
1/2 teaspoon baking soda

Directions:
Directions:
1. Cream shortening and sugar. Add vanilla.
2. Gradually stir in blended dry ingredients alternately with coffee.
3. Blend in raisins.
4. Bake at 325 in greased and floured small jelly roll pan for 15 min. or until done.
5. Frost with powdered sugar icing; use coffee for liquid.
