4 eggs
2 C. sugar
1-1/2 C. salad oil
2-1/2 C. flour (can use part whole-wheat)
1-1/2 C. cooked, mashed carrots
3 tsp. soda
1 tsp. salt
2 tsp. cinnamon
1/2 C. chopped nuts
FROSTING:
3-1/2 C. powdered sugar
1-8 oz. cream cheese
1/2 C. butter
1 tsp. vanilla
1/2 C chopped nuts

Directions:
Directions:
Beat eggs, sugar and oil and carrots together for 2 minutes.
Add dry ingredients and beat 1 more minute.
Stir in nuts.
Bake in two large cookie sheets for 20 minutes.
FROSTING:
Mix all ingredients except nuts with mixer until light and fluffy.
Frost cooled bars.
Sprinkle with nuts.
