Bulgur Pilaf with Dried Apricots Recipe

1/2 c. finely chopped onion
2 tbsp. olive oil
1/4 tsp. ground allspice
1/8 tsp. cayenne
1/8 tsp. cinnamon
1 c. bulgur
1 1/2 c. water
1/4 c. chopped dried apricots

Cook onion in oil in a saucepan over medium heat, stirring occasionally, until golden, approximately 5 minutes.

Add spices and cook, stirring 1 minute. Stir in remaining ingredients with 1/2 tsp. salt and simmer, covered, until liquid is absorbed, approximately 15 minutes. Remove from heat and let stand, covered, for 5 minutes.

Fluff with a fork before serving.

Makes 4 servings.
