1 lb. round steak, 1 inch thick
1/4 cup butter
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
4 T. soy sauce
1/2 tsp. granulated sugar
1 cup bean sprouts, canned or fresh
2 tomatoes, quartered or 1 cup canned tomatoes
2 green peppers, seeded and cut into 1 inch pieces
2 T. cold water
1/2 T. cornstarch
4 green onions, chopped

Slice the steak as thinly as possible, in short crosswise pieces.
Heat the butter in a wok or skillet and add the garlic, salt and pepper.
Add the beef and cook until brown on both sides.
add the soy sauce and sugar, cover and cook over high heat for 5 minutes. If canned bean sprouts are used, rinse and drain. Add bean sprouts, tomatoes, and green pepper. Cover and cook 5 minutes, then stir in cornstarch dissolved in the cold water, and cook, stirring, until thickened.
Sprinkle with chopped green onions.
Serve over rice.
