2 large green peppers
1 lb ground beef
1/4 c chopped celery (opt)
2 T chopped onion
1 c cooked rice
1 medium tomato, chopped
Dash pepper
1/4 c ketchup
1 (8 oz) can tomato sauce
1 tsp sugar
1/4 tsp basil

Directions:
Directions:
Heat oven to 350
Cut peppers in half, lengthwise, remove seeds and membranes and cook 5 minutes in boiling water. Drain and place in 10" square baking dish.
Brown beef, celery and onion and drain excess fat.
Add rice, pepper, tomatoes and ketchup. Mix well.
Spoon mixture into peppers.
Combine tomato sauce, sugar and basil. Spoon 1/2 over peppers. Bake uncovered 30-40 minutes than spoon remaining sauce over and bake another 5 minutes. If desired, you can also sprinkle some shredded cheese over top for the 5 minutes.

I have been making these since we got married. It was a recipe in a cookbook I got as a wedding present. I have never used the cheese however.
