2 eggs
1 3/4 cup flour
3/4 cup beer
1 Tbsp baking powder
4 dozen med shrimp, peeled and deveined, tail on
3 cups grated coconut
1 2/3 cup orange marmalade
2 1/2 Tbsp dry mustard
2 or 3 Tbsp horseradish (according to taste)
3 1/4 tsp seafood seasoning
flour

Directions:
Directions:
Combine eggs and beer and whip until frothy. Add seafood seasoning, 1 3/4 cup flour, and baking powder. Whip until smooth. Dredge shrimp in flour, then in batter, then dip in coconut. Cook in hot oil 45 seconds per side. Combine the dry mustard, horseradish and marmalade to make a sauce. Serve with sauce on side.
