4 filets Cod, about 4 to 6 ounces each
1/4 cup extra virgin olive oil
2 Tbsp chopped garlic
8 or 9 plum tomatoes, diced
1 tsp marjoram
3/4 tsp thyme
1/2 tsp basil

Directions:
Directions:
Heat olive oil. Add spices and garlic. Cook 3 or 4 minutes. Remove from heat and add tomatoes. Mix well, and let stand at room temperature for at least 4 hours. Mix 1/2 cup seasoned breadcrumbs with melted butter. Place cod filets on top tomato
mixture, and top with breadcrumbs. Bake,
uncovered, 20 minutes at 350.
Serve over cooked pasta or rice.
