1 cup white sugar
2/3 cup pumpkin
1 t. lemon juice
3/4 cup plain flour
2 t. cinnamon
1/2 t. salt
1 t. baking powder
1 t. baking soda
1 t. ginger
1 cup nuts optional
1 cup powdered sugar
1 (8oz) cream cheese softened
4 T. butter
1 t. vanilla

Directions:
Directions:
Beat eggs on high speed for 5 min. Reduce speed and add white sugar, lemon juice and pumpkin. Beat well. Sift together flour, cinnamon, salt, baking powder, and ginger. Add to other mixture. Grease and flour a 15x10x1 inch pan. Pour mixture into pan and bake 375 for 15-20 min. On linen kitchen towel sprinkle powdered sugar. Dump cake onto towel and roll up on long side. Allow to cool rolled up for 30 min. Mix 1 cup powdered sugar, cream cheese, butter, and vanilla. mix until smooth. unroll cake and spread in mixture. Then roll back up, chill & serve.
