1/2 cup flour
2/3 cup beer
1 1/2 tsp baking powder
1/4 cup flour
2 cups flaked coconut
24 shrimp peeled
3 cups oil for frying

Directions:
Directions:
In med. bowl combine egg, 1/2 cup of flour, beer abd baking powder. Place 1/4 cup of flour and coconut in two separate bowls.
Hold shrimp by tail and dredge in flour, shaking off excess flour. Dip in egg/beer batter allow excess to drip off. Roll shrimp in coconut and place on baking sheet lined with was paper, Refrigerate for 30mins.. Meanwhile, heat oil in a deep fryer.
Fry shrimp in batches turning once for 2-3 mins or until golden brown. Drain on paper towels. Serve with a dipping made with orange marmalade, mustard and horseradish mixed to taste.
