4 med. zucchini
2 tbsp. water
1 3/4 cups water
1 (6oz) pkg. chicken flavored stuffing mix
1/4 cup butter or margarine

Directions:
Directions:
In a baking dish add whole zucchini and 2 tbsp. water. Cover dish with plastic wrap and cover on high in the microwave 10-12 mins.. Cool slightly them cut in half lengthwise. Scoop out centers reserving pulp.
Arrange zucchini shells cut side up in dish and set aside.
In a pot add 1 3/4 water, butter and make stuffing following directions on back of box. Let stand for 5 min.. Cut zucchini pulp into small pieces and add to stuffing. Mix well. Spoon stuffing into zucchini shells and bake 20-30 mins. in a 350 oven. This is a great side dish for chicken or turkey.
