1 chicken, boned and shredded with fingers
1 qt tomato puree
1 clove garlic. pressed
1 tsp oregano
oil for frying
corn tortillas
shredded cheese

Directions:
Directions:
Add chicken, tomato, garlic and oregano into a 2 qt pan. Bring to boil then reduce to simmer. She let this simmer until all the juice was soaked up into the chicken, it usually takes a couple of hours. Let cool.
Heat about 2" of oil in frying pan, or you could use a deep fryer. Only take as many tortillas out of the fridge that will fit into your pan at one time; otherwise they crack. Roll about 3 tbsp of meat up in each tightly, holding together with a toothpick. Immediately put into oil, do the same with others. They only need to fry for a couple of minutes until golden brown. Tip slightly to drain and put onto paper towels. Each person unrolls their own and puts on shredded cheese or whatever else they deisre.

This recipe comes from Carol Bannatyne, our neighbor growing up, my close friend's mom who passed away a couple of years ago. They're not quite as good as hers were, but this is as close as I could get... she never had a recipe written down.
